Apple pancakes for dinner

I know these aren't really cakes... but pancakes are a favorite in our house, and I'm constantly working out different variations.  Especially if I can sneak in a few more fruits and veggies.  These are a favorite for the boys.  Very easy to make.

1.  Core and slice up some apples so you have little apple rings.  Peel is optional.
2.  Mix up your favorite pancake batter.  Add a splash of cinnamon and maybe a little nutmeg and/or ginger.  I like doing a multi-grain pancake mix I make that has oatmeal, wheat flour, and other healthy junk.  
3.  Now the fun part - drop the apple rings into the pancake batter.  Pull them out one by one and put them on your hot griddle.  Flip like a normal pancake.
4.  Place them on a plate - sprinkle with a little powdered sugar or a small drizzle of maple syrup.  The apple in the middle softens up and tastes like applesauce in the middle of the pancake. 
Super good... and not too bad for you.
