Cake/Cookie balls

So, I've been doing some experimenting with cake/cookie balls lately.  I love and hate them at the same time, and since they're all the rage right now I figured I'd better get proficient at making them.

Here are a few pics of things I've been messing around with lately...

That's right - S'mores on a stick without the campfire and the melted chocolate mess.  So, to make these little guys I used leftover graham cracker cake, mixed it with leftover chocolate frosting, froze it on the stick and then dipped the whole thing meringue - and then used my handy-dandy kitchen torch to toast them right up.  These are SOOOOOO good!!!  I did it another time with chocolate cake mixed with graham cracker crumbs and chocolate ganache in the center... very delicious.


I don't really love frosting...
Actually, I think I would like frosting more if I didn't frost things for hours at a time.  That being said, I've really enjoyed making batches of cake balls using the leftover cake and the leftover filling ingredients as the center.  This was a nice white cake mixed with a tart raspberry filling - super good.  It was tasty dipped in dark chocolate and had a pleasant red middle without the harsh red that food coloring can add sometimes.

I've found that I like making balls with cookie crumbs of various varieties, too... oreo's with cream cheese are good; mint oreos with a little bit of chocolate icing are even better; chocolate chip cookies crumbed up in a food processor with a little homemade buttercream or cream cheese icing and then dipped in chocolate are super yum.  Pretty fun so far!
